If the thief has any knowledge, he can break the wire, so you are probably safe.

Normal procedure would have been to earth via a horn button. You could for greater security earth it via a key switch to leave it earthed when the bike is unattended.

Good idea but remember that most key switches are 'open' in the 'off' position. When used to stop a magneto as discussed here, you will need a switch which is 'closed' in the 'off' position.

Honda C50/70/90 switch does this, as in the off position it shorts the coil to ground
