The supply p/p has it's own relief ball spring loaded and I've just made a banjo bolt with an adjuster into it and cut 1/4" off the original spring, when started again I can load or unload spring pressure, I've never seen a viscosity regulator for temp rise the pressure just drops. That's because the flow is easier.
Banjo bolts are normal spanner size is 7/16 " Whit I make mine 5/16" whit so it is easier to fit a spanner especially with the heads being so close together on the oil pumps.

I've got a similar pressure gauge set-up on mine mainly to remind me to turn on the supply tap to the pump. I find it generates about 25psi cold dropping to 5 psi hot. I use 50 oil in summer and 30 in winter. My pressure tapping is from the plug at the bottom of the pump so measures the pressure to the big-end quill.
